Cabbage Soup

  • Servings: 6
  • Difficulty: easy
  • Print

  • 1 head of cabbage
  • 1 medium-sized onion
  • 1/2 green pepper
  • 10 cloves of garlic
  • 4 cups chicken broth
  • crushed black pepper
  • 1 tsp cayenne pepper
  • 5 slices bacon
  • sea salt

Chop cabbage in fairly large pieces. Slice onion and green pepper in long, thin pieces. Mince garlic. Cut bacon into inch-long slices.

Sauté bacon first. Drain excess grease on paper towels. Save bacon fat for the staggered sautéing of all veggies. Cook garlic, green peppers and onions next, then set aside. Follow with cabbage. When everything is slightly browned, return all to pot, add chicken broth and cayenne pepper. Simmer ten good minutes. Add sea salt to taste. Voila!

This soup makes plenty of leftovers! Don’t forget to save your bacon separately so it stays crispy. Try it, your tummy will thank you.
