Peanut Butter Hot Chocolate w/ Marshmallow Cream

Peanut Butter Hot Chocolate with Marshmallow Cream. I had to repeat it. It’s like a dream. It started out with a simple desire for a warm beverage so yummy and rich that I’d forget the blustery cold. Dreams come true, people. Miracles happen.

Peanut Butter Hot Chocolate w/ Marshmallow Cream

Gather:

  • 1/2 pint whipping cream
  • 1 tbsp white chocolate chips
  • 1 tsp powdered sugar
  • 2 tbsp peanut butter
  • 4 tsp premium cocoa powder
  • 4 marshmallows
  • 2 cups half & half
  • 2 cups milk
  • sprinkle of nutmeg

 

Cook:

Double boil your peanut butter and white chocolate chips. If you don’t have a fancy double boiler, I hear ya. I don’t either. Just use a Pyrex (or other durable glass) bowl atop a tiny saucepan with boiling water. Meanwhile, in a slightly larger saucepan, heat the milk and half & half. Add cocoa powder and whisk continually. If you don’t whisk often enough it’ll form a skin. There’s nothing wrong with a skin, per se, but I noticed the skin would cause some uneven mixing. Meanwhile, in your mixer whip that whipping cream into shape with a teaspoon of powdered sugar. I let it whip for almost 7 minutes. Taste-wise the cream isn’t as sweet as you probably want it to be, but resist the temptation to add more sugar. You don’t need it, boo! That’s what the marshmallows are there for. Soften them in the microwave for, maybe, 20 seconds. Once your whipped cream is nice and thick, fold in the¬†marshmallow. When everything was set with my cream I went back to the hot cocoa mixture on the stove, re-whisked and gradually added the peanut butter/white chocolate concoction. This serves to perfectly thicken the cocoa and add a light, but definitely palpable peanut butter flavor. You’re able to get away with making a decadent drink with very little sugar. Like I said, miracles, people!

Serve:

Serve it a mug with cream on a top and a wee sprinkle of nutmeg for finishing. Deee-lish!
